These meatballs are so easy to make, only requires 5 ingredients and are packed with nutrients for your little one. It freezes well, and is a really simple balanced meal for your baby when you don't have the time to cook.
Ingredients:
500g minced beef
2 eggs, beaten
Butternut squash, roughly chopped
Chopped frozen spinach, defrosted
Olive oil
Optional - Coriander (or other herbs/spices of your choice)
Steps:
Roast the butternut squash for 15mins at 180deg till it is slightly soft.
Add the roasted butternut squash, and all other ingredients into a big bowl and mix together.
Roll the mixture into balls (or for babies under 9mo, you can roll them into a longer sausage shape) and place them on a baking tray lined with parchment paper / oil a mini muffin pan and spoon the mixture in.
Bake at 180deg for 25-30min till cooked through.
Serve as long sausages for babies 6-9mo, or cut up the meatballs into bite-sized pieces for babies >9mo.
Freeze for up to 3 months. It can be re-heated in the microwave, or steam them for 10mins.
