High-protein Tahini Maple Cookies

My children love cookies - which kid doesn't? - but I don't love that cookies tend to just be carbs and sugar. So I decided to make my own high protein cookies - the bonus is that my kids don't usually enjoy tahini, but they absolutely devoured these cookies.


Ingredients:

3/4 cup almond flour

1/2 cup cassava flour

2 tbsp collagen powder

1/2 tsp baking powder

1/3 cup tahini

1 egg

40g butter, melted

2 tbsp maple syrup


  1. Mix the almond flour, cassava flour, collagen powder and baking powder in a bowl.

  2. Mix the tahini, melted butter and maple syrup in a separate bowl.

  3. Crack the egg into the dry ingredients and mix it in.

  4. Add the liquid ingredients into the dry ingredients and mix well. It will form a sticky mixture.

  5. Spoon the mix onto a baking tray and flatten them.

  6. Bake for 12min at 170degC.
