My girls were getting picky about their food, and so I changed up one of my usual recipes - roasted salmon, roasted broccoli and steamed sweet potato into these salmon patties which were such a hit! As individual ingredients, they rejected the food. But when recreated in the form of these patties, they wolfed down the food in record time.
Salmon Patties
Ingredients:
- 150g fresh Salmon fillet / canned salmonÂ
- Sweet potato, sliced/dicedÂ
- Broccoli, choppedÂ
- 1 egg, cracked & beatenÂ
- Garlic/onion powder, or other spicesÂ
Steps:
1. If using fresh salmon, roast it at 160deg for ~10mins. It’s ok if it’s not fully cooked since we’ll be cooking it again.Â
2. Steam sweet potato for 30mins till it is soft enough to be mashed by a fork.
3. Blanch broccoli in boiling water for a couple of minutes til florets are soft.Â
4. Once the ingredients are prepped, flake the salmon into a bowl with the beaten egg (or if using canned salmon, drain the water and add it in here).Â
5. Mash in the sweet potato and cut off some broccoli florets to add in.
6. Add the garlic/onion powder or any spices you like to use to flavor the patties.
7. Shape into balls then flatten them and place them on an oiled oven tray or parchment paper. Bake for 10mins at 160deg.
8. Serve with the yogurt dip
Herb Yogurt dip
Ingredients:
- Plain (ideally, Greek) yogurtÂ
- Dill/coriander or any other herbs
- Salt, to taste
Steps:
1. Mix all the ingredients together & serve.
